If you are active on social media, you have probably seen this viral feta cheese pasta video. I’ve heard nothing but good things about this recipe, so I decided to try this recipe out. Spoiler alert: It is delicious!
- 400 gr/14 oz cherry tomatoes
- 500 gr/17 oz pasta
- 1 block feta cheese
- 1 onion
- 5-6 garlic cloves
- (extra virgin) olive oil
- Pinch of Italian seasoning to taste
- Salt, pepper and chili powder to taste
This recipe couldn’t be any easier! In the basic recipe, you put a few handfuls of cherry tomatoes in an oven dish, drizzle some olive oil on it and season it with salt and pepper. Put a block of feta cheese in the middle of the pan, drizzle it with more olive oil. I wanted to spice it up a little by adding some onions and garlic cloves. I also added a little chili powder in it for a little spice. Bake it in the oven for 40-45 minutes at 200 °C/392 °F. While the feta was baking, I cooked some penne pasta.
After baking the feta-tomato mixture for about 40 minutes, this is how the dish looked like:
After the feta was done baking, I mashed the feta and the garlic and I mixed everything together into a creamy sauce. If your sauce is too thick, you can mix in a little pasta water to thin it out. When the sauce is ready, add in your pasta, and dinner is ready!
